Suggested Usage

Cooking Instructions:

  1. In a large pot, add 4 quarts (16 cups) of water and 1 teaspoon of salt, if desired. Bring water to a boil.
  2. Add pasta and cook, uncovered, stirring occasionally, for about 7 to 10 minutes or until pasta is tender but firm. For a more al dente texture do not overcook. For a softer pasta cook a bit longer.
  3. Remove from heat. Pasta can be rinsed in cold water to prevent overcooking. Drain and serve as desired.

Store in a cool, dry place.

Penne and Nut-Free Vegan Pesto Sauce and Cauliflower

A recipe the whole family can enjoy! This tasty dish is vegan and is free of gluten, corn, and dairy.

Ingredients: (serves 4)

1 cup Ellyndale® Organic Extra Virgin Olive Oil
1 cup cauliflower, chopped
3 cups spinach, chopped
2 cups basil, chopped
2 cloves garlic, chopped
1/2 tsp salt
1/4 tsp black pepper

Directions:

  1. Preheat oven to 350°F.
  2. Place cauliflower on sheet pan and bake for 15 minutes or until heads are golden brown.
  3. In a food processor combine spinach, basil, roasted cauliflower, garlic, salt, and black pepper until coarsely ground.
  4. Slowly drizzle in organic extra virgin olive oil until fully incorporated.
  5. Toss with 1 box of cooked penne and enjoy!
